What are the origins of the cocoa beans used to make your chocolate?
Cocoa beans grow within +/- 10° of the Equator. Beans of various origins and high quality are used. A blend is then made, which gives our chocolate a unique taste. The recipe remains a well-kept secret :).
Are your products made with fair trade and/or organic chocolate?
Our products are not made with fair trade and/or organic chocolate and are not sold as such. Obviously, raw material sourcing is an important issue, but it is only one part of our environmental impact.
Are your chocolates certified by Aliments du Québec?
Yes, all our chocolates are certified by Aliments du Québec.
Are fresh wild blueberries coated in dark or milk chocolate available year-round?
No, for the simple reason that they are made from fresh, hand-picked wild blueberries, fresh from the day. Fresh wild blueberries coated in dark or milk chocolate are therefore only available during the blueberry picking season in Lac-Saint-Jean (from mid-July to mid-September).
What's the best way to store chocolate?
It is best to store chocolate in a cool, dry place, away from sources of heat.
What causes chocolate to bloom?
The white coating that sometimes appears on the surface of chocolate is due to fat migration to the surface. This reaction can be caused, among other things, by too much variation in the chocolate's storage temperature. Although less appealing, the chocolate is still safe to eat.
Can you freeze chocolate?
Although fresh chocolate is tastier, it is possible to freeze it. It is strongly advised to place it in an airtight bag to protect it from the smell of other foods and from moisture. To ensure maximum flavor after thawing, keep the chocolate in its packaging during this period until it reaches room temperature.

What year did the Trappist Fathers arrive in the region?
The Trappist Fathers settled in Mistassini in 1892. They left in the fall of 2023. The Chocolate Factory's operations continue, respecting the traditions passed down by the Fathers.
How many Trappist Fathers are currently living in the monastery?
Being only 5 and aging, the Fathers left in the fall of 2023 to join the community located in Saint-Jean-de-Matha.
Is it possible to visit your chocolate factory's production workshop?
For reasons of hygiene, food safety, and allergen control, it is not possible to visit the manufacturing workshop. During the tourist season (late June to mid-August), it is possible to take a visual tour (paid activity) of the factory which, via a windowed room, allows you to see the ongoing production. In addition, a video on the history and production techniques is offered, accompanied by a tasting.
What to do on your site?
The site is large and enchanting. We suggest you bring your picnic to enjoy it. Picnic tables and a swing are at your disposal. In addition, you can explore the grounds and discover the history of the Chocolaterie and the Fathers through the interpretive panels on the site.
Do you have a catering service on site and parking?
No, there is no catering service on site, but you can use our picnic areas if you wish.
